just like a good sharp knife I have had this knife now for 2 years. we use this for everything at my house from cutting meat, carving turkey, chopping veggies, and even slicing the occasional bday cake. I’m not a chef by no means, just like a good sharp knife. The only thing I ever do with it maintenance wise is wash it by hand and run it along a honing rod. Still just as sharp as can be and looks like it did when it come out of the box. would easily purchase again if it should ever mess up
One knife only? This is it. Fantastic quality, beautiful knife folded 101 times with a hardness of 63. I can’t ask for much more. Very well balanced, lightweight but not flimsy. This is my favorite knife in my collection.
