I did my research and determined that the SG2 steel that these knives are made of is one of the better options. This knife did n These Miyabi birchwood knives are a work of art. I wanted to see the difference between German steel and the harder Japanese steel. I did my research and determined that the SG2 steel that these knives are made of is one of the better options. This knife did not disappoint. Definitely feels sharper than my Wusthof knives.
